GABA (gamma-aminobutyric acid) is formed in tea through a special process known as anaerobic fermentation. This process was developed in Japan in the 1980s, and the result is what’s called GABA tea, which contains an increased amount of this amino acid.
The process is as follows:
- Harvesting and processing tea leaves: Tea leaves are harvested and undergo initial fermentation in low-oxygen conditions. This is achieved by placing the leaves in vacuum or airtight containers, where the oxygen level is controlled.
- Fermentation: In low-oxygen conditions, the enzyme glutamate decarboxylase is activated, which converts glutamic acid (glutamate) in the tea leaves into GABA.
- Process fixation: After the desired GABA level is reached, the leaves are heat-treated to stop the fermentation and preserve the GABA content in the tea leaves.
Thus, GABA tea is the result of a specially designed process, and its consumption is often associated with positive effects on the nervous system, such as reducing stress and improving sleep.
