Yellow tea
One of the most expensive varieties. It was a favorite drink in the imperial court, and during that period of time the recipe for its preparation was not disclosed, since disclosure was punishable by death. Today, elite yellow tea, which is produced only in China, is also available in Ukraine.
It resembles green, but the external similarity of yellow tea with green disappears after brewing. This is due to the fact that in the technological process of processing the raw materials for yellow tea are languishing, while for the preparation of green tea, languishing is not used. Yellow tea is lightly fermented green tea. Depending on the raw material used, it can be leaf or kidney.
White tea
The elite varieties of white tea include weakly fermented types:
- Silver needles. For its manufacture, young buds are used, the surface of which is covered with a fluffy whitish pile. The collection of kidneys takes place in March. Baihao Yinzhen has an exquisite sweet taste, which is characterized by berry sourness, with a refreshing and long aftertaste;
- White peony. For this grade of white elite tea, buds with two blossoming leaves, collected in April, are used. The finished drink has a refined taste with floral and fruity notes.
Pu-erh
Pu-erh also has elite varieties. These include both sheng (raw or green) and shu (ready or black). Shengs undergo natural aging during long-term storage, so they have an inherent taste of antiquity. Shu pu-erhs are artificially aged during processing, but they also reveal their interesting taste and aroma during long-term storage, while all the useful substances in the tea leaf are preserved.
Te Quan Yin
This is oolong or oolong, the raw material for which is collected in Anxi province. Large-leaf tea, semi-fermented, its taste is dense, with frosty freshness and nutmeg notes. The aroma contains citrus and plum notes. The drink leaves a long aftertaste.
Blossoming (linked) tea
Bound tea occupies a separate niche. It not only impresses with its originality, but also with its wonderful multifaceted taste and amazing aroma. This tea is made only by hand. Elastic tea leaves are tied together, one or a composition of several flower buds (chrysanthemums, jasmine, lilies, clover, amaranth, others) are placed inside the bundle. When brewing, the buds open, and the brewing process itself is a magnificent sight.
