Chinese green teas are characterized by the traditional method of stopping fermentation, which in China is called “Sha Qing” or “killing” greens. It can be produced in three ways: roasting in a special boiler, heating over coals and steaming over hot steam.
The third method – steaming – is almost never used in China, but is the main one for Japanese teas.
