Hong cha or red tea takes pride of place among other varieties of Chinese tea. This type includes heavily fermented tea, the oxidation of which is about 90%. In fact, red tea is called only in the country of its production. In Europe, it is familiar to connoisseurs of this exquisite drink as traditional black tea.

A distinctive feature of the red tea production process is the absence of a step called “de-greening”. On it, the raw materials are subjected to rapid heat treatment, which stops fermentation. Raw materials for red tea are first twisted, kneaded, and only after that they are heated very slowly. The main steps in making red tea are:

  1. Drying.
  2. Twisting, crushing leaves.
  3. Fermentation.
  4. Dry at the same moderate temperature.

Fermentation is the most important stage that allows you to make a drink from a plant. It is carried out after twisting, bending the leaves until the juice appears and the oxidative process begins.

The aroma of dry tea is very interesting and recognizable. It has honey and spicy notes. The finished drink acquires a bright shade, which depends on the type of tea. It can be both light orange and dark ruby, and sometimes brown and even brown. Chinese red tea is characterized by a rich, pronounced taste, with sourness, astringency. After drinking tea, a pleasant sweetish or slightly tart aftertaste remains.
