The traditional drink in Japan is matcha, known in European countries and in our country as matcha tea. It differs from other species in its unusual powdery consistency (green powder), bright taste characteristics. In addition, the product is universal.
Dry powder is used to prepare a variety of Japanese dishes, added to pastries, desserts, sauces, to give them a rich green color.
The taste of matcha tea is slightly sweet, with a slight bitterness. The taste of tea is directly affected by the presence of amino acids in it. A richer, deeper flavor and aroma will be found in the higher varieties harvested first, while the varieties harvested later will have less flavor. By density, consistency, shade, aftertaste, Japanese matcha tea is divided into several varieties. The most famous include:
- Dakota. Its taste is viscous, and the color is the lightest of all kinds.
- Gotcha. It goes well with other drinks.
- Kama. The color of this tea is darker.
- Morning tea. It can be consumed in its pure form, as well as with cream or milk.

Harvesting of leaves occurs only once a year and only by hand. The most valuable leaves are collected in spring. A few weeks before the start of the harvest, usually two weeks, the bushes on the plantations are covered or special canopies are made for them so that the sun does not fall on the leaves. Such activities allow you to preserve the freshness of the leaves, their dark green color, and due to saturation with amino acids, get a soft and sweet drink.
For raw materials, young upper leaves without twigs are selected. For drying, they are placed in rooms that are well ventilated, while the sheets are not twisted. After drying, the raw material is ground to a light powdery consistency, obtaining a powder of bright green color.
Another way to get matcha tea is to soften the leaves with steam for an hour. After that, the raw material is pressed to give each sheet a smooth, even shape. After partial drying, sorting is performed, another drying, grinding into powder. This method of production allows you to get tea with a delicate spring aroma.
