The story of Tie Guan Yin.
Raw materials are collected from the highest bushes, because the higher the bush, the better the tea. Only the upper leaves are taken where there is a sufficient amount of juice. The collection of raw materials begins much later than for green teas. The processing technology for this species is also longer, while retaining all substances useful for the human body (vitamins, trace elements)
Tieguanyin is an undeniably divine drink, the aroma of which is dominated by lilac and violet. Its color can be either light green or amber. The taste of the drink is slightly sweet, with a long-lasting floral aftertaste.

Production of Tie Guan Yin
For the production of Tieguanyin, mature leaves are harvested, which are rich in essential oils and trace elements. Tieguanyin has an average degree of fermentation, only the edge of the leaf undergoes fermentation. The collected sheet is laid out in the sun, after the appearance of signs of oxidation, that is, the red edge, they proceed to the next stage – drying. Drying takes place in a centrifuge and stops the fermentation process. Next, the leaves are cleaned of unnecessary particles – twigs, buds and pressed into bags. The final stage is drying, roasting and packaging. Tieguanyin is packed in vacuum bags, in the same bags it goes on sale. Te guan yin is better to buy in original vacuum bags, which preserve the integrity of the leaves, the originality of the packaging and guarantee the quality.
Schematically, the production looks like this:
- layout of raw materials;
- drying in the sun;
- cooling;
- tossing and shuffling;
- roasting raw materials to stop fermentation;
ball rolling, shape memory (repeated 5 to 15 times); - clearing cuttings;
slow frying in an oven or oven over low heat, or - smoking on coals;
- selection, sorting and packing.
Te Guan Yin Effect
Tie Guan Yin tea is a semi-fermented oolong tea, you can also hear another name for it – turquoise tea. This is the favorite tea of the Chinese, it comes from Fujian province, they collect tea from the bush of the same name Guanyin. Te Guan Yin tea is a special and unique type of oolong, it resembles something between green and black teas, has an expressive aroma, gives a pleasant lightness in the body and is comparable to euphoria, the stronger Te Guan Yin tea is brewed, the more intense and heady aftertaste. Tea has an invigorating effect, improves efficiency, clears the mind, we especially recommend taking it in the morning.
Tie Guan Yin is rich in vitamins and minerals, improves brain function, invigorates, strengthens the cardiovascular and immune systems. Real te guan yin tea is not so easy to buy, such a variety as “Black Dragon” can only be tasted in China, it does not reach Europe.
Te Guan Yin tea varieties
There are several varieties of this tea, which differ from each other in taste and aroma.
- Lao Tiguanyin (Dark Oolong). This is the least known subspecies of this tea. It is seasoned (this is indicated by the prefix Lao), and the more the tea is aged, the more noble and diverse its taste becomes. To preserve the taste characteristics, prevent loss of quality, tea is periodically roasted during storage. This subspecies is considered elite, it is used by true connoisseurs of Chinese tea.
- Mao Cha Te Guanyin. Tea with cuttings (parts of the stem from leaf to branch), due to which the essential oil is preserved. It is a light oolong tea with an attractive, mild and delicate taste. The tea leaves of this subspecies are much larger than others, have a different shade.
- Tieguanyin Chuan Tong, which means traditional. A classic tea with a deep taste that doesn’t have a lot of floral notes, but caramel notes show through.
- Nong Xiang. An autumn tea with a strong aroma and buttery taste.
- Qing Xiang. The lightest refreshing and soft tea. The period for collecting raw materials for the manufacture of this subspecies is spring and early summer.
- Kao Te Guan Yin. The manufacturing recipe is close to the classic one, but it is not fried, but smoked on coals. Tea is quite rare..
The highest grade and most expensive tea is Te Guan Yin Wang. There are also varieties such as Tieguanyin Tangbei, Heicha Oolong, Tieguanyin Chenxiang.
Teguanyin how much to brew?
Like most Chinese teas, Tieguanyin can be brewed up to 8-9 times, and each time it will open in a new way.
