Bai Ji Guan is one of the famous northern Fujian oolongs! Bai Ji Guan (白鸡冠) translates to “White Rooster Crest.” Bai Ji Guan oolong is a rare tea that undergoes a complex processing. If the delicate leaves are over-fired, it will spoil the luxurious taste. The raw material is heated at low temperatures. Then the tea reveals a refined, delicate, yet stunningly bright flavor. It grows in the gardens of the protected area of the Wuyi Mountains, in the north of Fujian province. It is mainly produced in April-May from delicate young leaves.
