History of tea
Today you can buy tea in Ukraine in any supermarket or shop. Tea is an integral part of our life, we do not even think that tea is the oldest drink, whose age is 5000 years. Tea is the second most popular drink in the world, and Chinese tea is one of the most popular drinks in the world. This is not surprising, since Chinese tea has a long history of tea production. The history of Chinese tea begins with Emperor Shen Nong, who made tea famous all over the world. It is China that is the historical homeland of tea, where tea is not only a drink, but a part of the cultural life of the population.
Tea production stages
Camellia sinensis – the scientific name of tea, is an evergreen shrub from which more than 500 types of tea are made. For good, quality tea, young leaves and buds must be harvested, most often tea leaves are harvested by hand, so the tea is of higher quality. In addition, there are many additional factors that affect the quality of tea:
- – tea plantation location;
- – the age of the bush and the collected leaf;
- – tea leaf collection month;
- – weather conditions and climate.

Tea processing. Fermentation.
It should be noted that each type of tea has a different processing. Let’s highlight the main stages of tea leaf processing.
So, after collecting the tea leaf and before packing the tea, the tea leaf goes through the following stages:
- Drying the tea leaf or drying it, as a rule, this stage takes place in the sun, in the shade or in an oven, depending on the type of tea.
- Rolling the tea leaf or pressing it, at this stage the tea leaf releases the juice in the form of polyphenols and enzymes.
- Next, the tea leaf goes through the path of fermentation, namely oxidation, saturation of the tea leaf with oxygen.
- Mechanical processing of tea raw materials to give it the desired shape.
- The final stage is drying, which stops the fermentation process by roasting or quickly heating in an oven.
Fermentation is a unique process, as a result of which we get a huge number of varieties of tea, with different taste, aroma, color, a set of useful minerals and vitamins.
Types of Chinese tea and fermentation.
Depending on the degree of fermentation and roasting, we get different varieties of tea – black, red, green, white, yellow.
Each variety of Chinese tea has a different degree of fermentation, and, accordingly, different taste, color and purpose.
White, yellow, green teas have the lowest percentage of fermentation from 0.5% to 15%.
Oolongs. The average degree of fermentation is up to 60%. Oolong teas are considered semi-fermented teas, which gives them a fresh spring flavor. Fermentation also affects the color of the tea leaf, so light oolongs have a lower percentage of fermentation, they include Te Kuan Yin, popular milk oolong and ginseng. Da Hong Pao, has a darker color, correspondingly a higher degree of fermentation.
Red tea has a high degree of fermentation, which is why the dark almost black color of the leaves, as well as a strong thick taste.
Pu-erh – have a high degree of fermentation; that the longer Pu-erh is stored, the richer its taste.
Tea characteristics
Regardless of what kind of tea is bought, the dry brewing presented by us meets certain requirements.
The tea leaves are uniform in color, have approximately the same size, twist shape.
Tea can have a weak or strong aroma, but at the same time it is uniform, without a hint of mold or dampness. During brewing, the smell remains the same as that of a dry product, the tea acquires a soft, without bitterness, balanced taste, a transparent shade characteristic of a certain variety.
During brewing, tea sediment does not form at the bottom of the teapot. This indicates that the tea is of high quality, does not contain dust, litter.
Shape of real Chinese tea
Toto create a delicious drink with unique properties, just collecting a tea leaf is not enough. Each variety is characterized by giving a special leaf shape. Twisted
The twisted shape is typical for red teas. The tea leaf may be horizontally rolled in the form of balls, or vertically rolled in the form of tubules.
Spiral
Tea leaves curl into a spiral, shaped like a spring. When brewing, tea unwinds, while the leaf rises or falls down. There is a so-called “tea dance”. In this way, elite varieties are produced.
Bound
The long tea leaves are tied together. Various inflorescences are placed inside the bundle (calendula, clover, amaranth, others). During brewing, the ball opens up and turns into a luxurious composition, creating a magnificent spectacle. Often it is this tea that acts as a presentation.
Spike shape
This is the most delicate processing of the tea leaf, used for sharply shaped unblown buds (this raw material is of the highest quality). Buds in the form of flat peaks – a characteristic form for green, yellow teas from Jiangsu, Zhejiang, Anhui.
The result of this procedure is getting sharp as the peak of tea leaves. During brewing, they take a vertical position, and tea connoisseurs enjoy not only the exquisite taste of the drink, but also the play of tea leaves.
